Located in Liège, Belgium, Millésime Chocolat is one of the few chocolate factories in Belgium that works directly from cocoa beans: "Bean-to-Bar". They exclusively produce vintage chocolate, from a terroir, with a precise geography, and therefore limited! They want to highlight the work of nature, whose flavors change from year to year, while retaining the characteristics of each region or each country. Millésime's approach is to work with only beans from exceptional plantations and terroirs. They do not mix crops, terroirs or vintages. Their beans come from trees respecting the ancestral genetics of cocoa trees.

Passionate and trained in the world of artisanal chocolate, Jean-Christophe HUBERT imagines creating his own chocolate factory from the roasting of beans. He was trained at CIRAD in Montpellier - Center devoted to agricultural research for the development of sensory analysis of chocolate and cocoa expertise, and at the Fine Cacao and Chocolate Institute in New York.

DESCRIPTION

Millésime Chocolat only works with cocoa beans from plantations that respect nature, the biotope, and that reject intensive cultivation. Their beans come from unmodified grape varieties respecting the ancestral genetics of cocoa trees, allowing full traceability between the beans and the finished chocolate. They also ensure fair remuneration for planters and the refusal of child labor.
