When Ilyse Rathet & Ron Post lived in Italy as teachers, they fell in love with the Italians’ slow, mindful way of dining, which relies on local, organic ingredients. Lunch and dinnertimes stretched for leisurely hours. When they returned to the States, they wanted to translate their way of eating for American palates. Ilyse & Ron work with Italian food producers who have been using the same land to grow the same crops to make the same dishes for centuries. They create specialties exclusive to their own regions’ microclimates, whose character is impossible to duplicate elsewhere.
